Our Shimono Sencha is produced by Mr. Shimono Koki, a 3rd generation tea farmer and certified eco-farmer that implements sustainable practices such as low use of fertilizers, composting and beneficial insects. This skillful, first-harvest blend consists of four different cultivars: Yutaka-midori, Yabukita, Saemidori and Asatsuyu. It has a rich umami flavor profile with a sweet aroma and notes of edamame and artichoke hearts.  

The Chiran area has a deep tradition of tea farming in Japan that began around 1659 with history tracing back to the samurai era. Located in southernmost Japan, Chiran is an ideal tea growing region due to its warm and humid climate and is therefore able to grow a variety of cultivars beyond the common Yabukita. The tea fields are grown on steep hillsides with mineral-rich volcanic soils producing highly flavorful teas. Chiran is an award-winning tea region.

Flavor Notes: rich buttery umami with a lasting sweet finish

Preparation:
6g (2-2½ tsp) tea | 6oz water | 158°F | 60 sec
Add tea to a kyusu, small teapot or brewing vessel. Add 158° water (boiling water will cause strong bitterness). Wait 60 seconds. Pour. Repeat up to 4 infusions.

Adjust tea to water ratio according to preference. 

Store airtight in a cool, dark location. Use within 3-4 weeks after opening for peak freshness. Shelf life one year after opening or two years unopened.
